INTRODUCTION TO AQUATIC PRODUCTS PROCESSING TECHNOLOGY
Ho Chi Minh City University of Industry and Trade (HUIT)
Aquatic Products Processing Technology is a dynamic discipline that integrates research, innovation, and technological application across the entire value chain of aquatic products, from processing and preservation to quality control and commercialization. The field is dedicated not only to creating products but also to enhancing nutritional value, extending shelf life, and ensuring food safety in accordance with rigorous international standards. As aquatic products remain one of Vietnam’s key export sectors, this discipline plays a vital role in increasing product value and strengthening global competitiveness, offering strong career prospects for future graduates.
The program at HUIT is designed with a clear interdisciplinary orientation, combining core knowledge in food biochemistry, food microbiology, aquaculture fundamentals, raw material selection, processing technologies, and quality management. This integrated approach enables students to understand the scientific nature of aquatic food products while developing the ability to operate production processes, control quality, and continuously improve and innovate products in response to market demands.
A distinctive feature of the program is its strong emphasis on practical training and industry engagement. Students gain hands-on experience through laboratory work, pilot-scale processing, and internships at factories, where they are exposed to modern technologies such as freezing, preservation, value-added processing, and food commercialization. Alongside technical expertise, the program cultivates analytical thinking, problem-solving skills, experimental design, and product development capabilities. Creativity and innovation are actively encouraged, empowering students to adapt to technological advancements and the evolving needs of the global market.
Throughout the program, students may pursue either a Bachelor’s or an Engineering track. The Bachelor’s program, completed in 3.5 years (121 credits), focuses on foundational knowledge and essential competencies, including aquaculture basics, aquatic raw materials, processing and post-harvest technologies, food analysis and evaluation, product research and development, process optimization, preservation, commercialization, and food safety. The Engineering program extends to 4 years (151 credits), with a stronger emphasis on solving complex technical problems, managing production systems, and applying data-driven approaches to decision-making within the supply chain.
This program is well suited for students who are passionate about aquatic food products and committed to quality and food safety. Success in this field requires logical thinking, attention to detail, a strong sense of responsibility, teamwork, and a proactive learning mindset.
Graduates of Aquatic Products Processing Technology benefit from diverse and flexible career opportunities. They can work in processing enterprises as process engineers, production managers, technical specialists, or research and development staff, where innovative ideas are transformed into market-ready products. In the field of quality and food safety, graduates may pursue roles in quality control (QC), quality assurance (QA), laboratory analysis, or participate in the development and implementation of quality management systems such as HACCP, ISO, and BRC, contributing to product reliability and brand reputation.
Beyond manufacturing, career pathways extend to aquatic product trade, import-export operations, business development, and the rapidly expanding sectors of convenience food and fast food. Opportunities are also available in government agencies, research institutes, and organizations involved in technical consulting and technology transfer. With a solid academic and practical foundation, graduates are well prepared to pursue entrepreneurship by developing value-added aquatic products, or to continue their studies at advanced levels in aquatic products processing, food technology, or food quality and safety.
By aligning scientific knowledge with technological application and real-world production, Aquatic Products Processing Technology offers a solid foundation for long-term career development in a key economic sector. It is a field where ideas are transformed into tangible products, where knowledge creates value, and where learners can steadily establish themselves in an increasingly globalized environment. Choosing this program means choosing a proactive, sustainable, and future-oriented career path.
